Fermentation underpins both brewing and baking but it is also a fundamental biochemical pathway. Glycolysis produces pyruvate that is used in the Krebs (citric acid) cycle to produce ATP when oxygen is present. However when oxygen is absent glycolysis quickly uses up a cell's store of NAD+ causes glycolysis to stop.

Fermentation has evolved to regenerate NAD+ to keep glycolysis going in an anaerobic situation.

Your students first make models of atoms out the colourful parts. Then they make their molecules and work through the steps of both lactate fermentation and alcohol fermentation.

The differences between the pathways becomes obvious and you can clearly show how NAD+ is regenerated by the cell. The model is a useful extension to our Glycolysis Biochemistry model.
